I am on a no carb diet.  There are a lot of restrictions for what I can and can not eat.  One food item that the doctor recommends to eat a lot of is eggs.  

My all time favorite way to eat eggs is to devil them!!




I went to my local Big Y to pick up some Davidson's eggs.  Their eggs were fresh, and looked perfect!!  Each egg was the whitest I have seen, and they were all perfectly proportioned. 




When I got home, Ben and I started our egg adventure with a beautiful over easy.  It looks as good as it tastes!!




We then made some deviled eggs.  I make mine with not only mayonnaise, but with dill as well.  It adds a delicious pop of flavor!!



Another way I love to use eggs is in my potato salad.  I use red skin potatoes, dill, mayo, eggs and bacon!!  It is absolutely delicious.  I wish I had some now!!

Safe Caesar Salad Dressing
Servings: 4 / Active time: 15 mins / Total time: 15 mins
Ingredients
1 to 2 tsp finely chopped garlic (1 to 2 medium cloves)
1 anchovy fillet, mashed (or 2 inches of anchovy paste)
Pinch coarse salt
2 tbsp freshly squeezed lemon juice (juice of ½ lemon)
3 drops Worcestershire sauce
6 tbsp extra-virgin olive oil
Preparation
1.       In a blender or food processor, combine all ingredients except olive oil until blended.
2.       With the motor running, slowly drizzle in the olive oil until dressing is well combined and creamy.
3.       Toss dressing with freshly grated Parmesan cheese, romaine lettuce, croutons, and coarsely ground black pepper and serve immediately.
